Keto Quiche

    Ingredients

    For the Base:

    • 1 cup or 100g Seriously Low Carb Almond Flour
    • 50g salted butter melted
    • 1 egg

    For the Filling:

    • 3 rashes bacon
    • 1/2 red onion (fry bacon and onion together and leave to cool)
    • 80g grated Cheddar Cheese
    • 2 eggs
    • 1-2 tsp Dijon mustard
    • 100ml Double Cream

    Method

    For the Base:

    1. Mix all together until combined
    2. Place into a dish and press to cover. Make sure there are no gaps or thin parts.
    3. Cook for 12 min on 170c

    For the Filling:

    1. Mix together the cream, egg, cheese and mustard until combined, then add the cooled filling and mix again.
    2. Pour the mixture into the partly baked base and return to the oven for 25 mins at 170c.
    3. Leave to cool slightly before removing from the dish.
    4. Enjoy it warm for the best taste.
